Heritage Pork Loin that has been cured in garlic and allspice before being hung and air dried for a period of 3-4 months, minimum. Very savoury and pairs excellently with any pickle or mustard.
Preserved lemon, fresh and dried herbs and of course a bunch of white wine!
Made using BC raised organic beef and done in the style of South African Biltong. Strips of marinated beef dried to the point of being shelf stable, this is the perfect camping or hiking snack.
